Happy Tuesday! This weekend, Brian and I discovered the secret to restaurant-style steak. It involves an inordinate amount of butter, zero time on the grill, and a cast iron skillet. Did I mention the butter? Anyway, here is what we have been eating recently...including the most delicious steak ever!
This Broccoli Fettuccine Alfredo is from Budget Bites. Even better, it only requires a handful of ingredients, is "lightened up," and comes together in 20 minutes or less. These are all of the important characteristics that make a meal enter our regular dinner rotation!
While Brian was away last month for training, I managed to kill a pot of sweet mint and some cilantro. I never said I had a green thumb! Luckily, our basil survived the "drought" and went into this pesto. I used Ina Garten's basic recipe and served it with whole wheat pasta.
While I was on my pesto kick (due in part to the purchase of a cheapy food processor from Wal Mart), I also made this Roasted Red Pepper and Basil Pesto. I loved this different twist on pesto and the addition of grilled chicken.
The first time my sister made this chicken salad, I was incredibly skeptical. It calls for grapes, curry powder, and mango chutney(?!)...and normally, I'd pass. Luckily, she convinced me to try it and it is still my favorite recipe for a "dressed up" chicken salad. I made a whole batch of Paula Deen's Curry Chicken Salad and ate it on croissants for lunch throughout the week.
And last, but certainly not least, the most amazing steak I've ever had...and surprisingly, it was made in our own kitchen! Searing the steak on the stovetop and finishing on the oven (in addition to the aforementioned butter) are the secret to this Restaurant Style Filet Mignon. We made it Sunday night for date night at home, and served it with roasted vegetables and mashed potatoes. But no, not just any mashed potatoes - this is my new go-to recipe from the Pioneer Woman with an unexpected secret ingredient that makes the creamiest mashed potatoes ever. Don't knock it 'til you try it! I even cut down a good bit on the unhealthier ingredients, and they were still perfect. This entire meal was special occasion worthy. It was that good. :)
