I am certainly not a food blogger, and I often take pictures of my food using my iPhone (so the quality? not so good). But, with marriage has come meal-planning, and I know that I love seeing what other people are doing to solve the "What's for dinner?" question. So, I introduce to you..."Tasty Tuesday." You can click on the included links for the recipe and better photos of each dish. And, while I lead an active, healthy lifestyle with exercise and moderation, you won't find any off-the-wall health food here. (You can read my philosophy on that here, where I discuss eating cake for breakfast.) :)
I am still learning how to best plan meals for us, but we currently meal plan and grocery shop once every two weeks. On the "off" weeks, I make a quick stop to pick up any fresh ingredients that I didn't want to go bad for our second week of meals. I plan out the meals, but don't give them assigned "days"...we usually discuss and decide what exactly we're having the day before so I can determine whether anything needs to be prepped or defrosted. So far, this system is working well for us! My next step is to get into shopping based on price cycles so we can keep our grocery budget under control...I have a lot of research and learning to do on Southern Savers. :)
Pinterest has been a really wonderful tool for me to keep track of a lot of ideas (and not just about food...but organization and decor too!) You can always follow my Dinner Ideas board to see what I'm thinking about making in the coming weeks. :)
Enough blabbing, here's what we have been eating recently!
This recipe for Chinese Chicken and Broccoli was so good. We aren't huge take-out people, but this will probably eliminate our need to ever order Chinese food. It requires a couple of weird ingredients, but I think we'll be making the sauce from this dish for lots of different stir-fry recipes in the future. Next time, I'll definitely toss the chicken in cornstarch like the recipe recommends!
Not gonna lie, I had high hopes for this Grilled Island Chicken but the marinade was definitely not my favorite. On the plus side, Brian is absolutely loving his new grill and I'm looking forward to finding some grilling recipes that we love. (My Margarita Chicken recipe from way back when might be our next attempt!)
I never said I was performing rocket science, just keeping my new husband fed and happy. Calzones are ridiculously simple...dough, pizza sauce, mozzarella cheese, and pepperoni in a pretty little package. I think my next variation on this one will involve pesto (from the basil that Brian is currently growing in a mini herb garden) and chicken!
I think this Creamy Taco Mac will definitely enter our regular dinner rotation. It is SO quick, easy, and delicious! It literally calls for like five ingredients and comes together in no time at all. It made the perfect amount for the two of us, but it seems to me like the recipe makes more sense to double.
I have an unhealthy obsession with the BBQ Chopped Chicken Salad from Panera Bread, so this BBQ Chicken Salad with BBQ Cilantro Lime Dressing was my attempt at recreating the most perfect salad of all time. While it wasn't exactly the same, it was the type of restaurant-quality salad I never thought I could create at home. The dressing definitely makes the salad, and it was even better the next day!
Another dinner so simple that I feel a bit silly including these Chicken Caesar Wraps as a "recipe." But we finally discovered the perfect tortillas in the refrigerated section at Kroger, so I envision a lot of wraps in our future! I also discovered the easiest way to make shredded chicken in the crock pot, so I have been cooking and freezing individual portions of already cooked and shredded chicken. It makes dinners like this come together in just a couple of minutes!
